1 can chickpeas (drained)
10 baby tomatoes (halved)
½ cup cucumber (diced)
¼ red pepper (diced)
¼ yellow pepper (diced)
½ small red onion (diced)
1/2 red bird’s eye chilli (diced)
2 cups baby spinach (shredded)
3 peppadews
1 block herbed feta (crumbled)
½ tsp crushed garlic
2 tblsp olive oil
3 tblsp lemon juice
1 tsp cumin
salt and pepper to taste

1. Add drained chickpeas to a bowl and add all diced and prepared fresh ingredients.
2. Mix together and drizzle olive oil, lemon juice and garlic.
3. Mix well, serve and enjoy!
